good energy baked veg

todays evening meal was roast veg. I used sweet potato, spring onions, 3 small tomatos three cloves of garlic, peas in pods, sweetcorn, asparagus and tenderstem broccoli. I chopped everything up, put some sea salt on and put in oven on 170 till they were cooked, around 50 minutes. Before eating, I poured on some extra virgin olive oil



was going to make raw cake today, but no time, so postponed.

I do feel like I have more energy after three days of eating healthy. I hope I lose some weight. will report next week

salad day

This is day 2 of my healthy diet

today I had porridge for brekky, then nuts and a banana for lunch. Tea was a salad of baby leaves, avocado, tomato, cucumber, sweet corn. I made a dressing with vinegar, olive oil and agave.



 For supper I had fruit salad which I made with fresh pinapple, mango, oranges, kiwi,blueberries and blackberries

day 3 of healthy diet

Today I just did not know what to eat. I had porridge with almonds and agave for brekky. Went to gym after 10 days off. Light workout.

Then a banana  and a few cashew nuts for lunch. Was really struggling in the evening, so made brown rice with chick peas and red kidney beans out of tins.

I fried a small onion and two chopped cloves of garlic, Then washed and added te beans and chick peas, fried for a about ten minutes, then added the already cooked rice.



It tasted nice, was really filling. may have a few yogurt coated almonds if I feel hungry later. Going food shoppig tomorrow

happy new year foodies

today I had an amazingly lovely day. My niece introduced me to a new supermarket where I found some very interesting foods to try. In my bid to eat a healthier this year, I bought a lot of nuts, coconut oil, coconut milk, some very tasty noodles (which I had not had before).

As soon as we got home, we made a coconut and carrot cake. This cake had no sugar in it and no dairy, was sweetened with agarve and dates and we used coconut milk. We baked the mixture patly as muffins and partly as flat cake ( see right)



We made an interesting and healthy dish for our weird time meal, We ate at 5 which is too late for lunch and too early for dinner. We had noodles, avocado, roasted cashew nuts and mixed seeds, runner beans and corgette. drizzled some olive oil. Enjoyed the food immensely, even more than usual because it wsa so healthy. Yum .



I followed the meal with some Iranian ice cream. It had pistachio nuts and rose water. Also Yummy. Being greedy as I am, I followed the lot later with some baklava

I love cooking, I wanted to make granola today but had no time, hopefully will make it tomorrow.

Hello!

Hi there!
This is my first experience of writing a blog. I'm a big fan of healthy food and have decided to start this blog to share recipes, plus any tips I pick up along the way. Hopefully I will have feedback from others who will be kind enough to share with me their recipes too.
